Roasted Pumpkin with Lemon Yogurt Sauce and Pine Nuts
Ingredients:
1 1/4 kg Pumpkin, peeled, seeded, and cut into cubes
3 tbsp Olive oil, extra virgin
1 Garlic clove, minced
2 tbsp Fresh coriander/cilantro leaves, chopped
3/4 tsp Salt
1/4 tsp Black pepper
1/8 tsp Sumac (optional, for extra flavor)
2 tbsp Pine nuts, toasted
Lemon Yogurt Sauce:
3/4 cup Greek yogurt
1/2 Garlic clove, minced
1 tbsp Lemon juice
Salt and pepper, to taste
