I’ve been on a roll with this recipe, 6 times and counting!

1. Preheat your oven to 350°F (175°C).
2. In a large skillet, cook the lean ground beef, ground pork, and onion over medium-high heat until browned. Season with salt, pepper, cumin, and garlic to taste. Drain excess fat.
3. In a separate skillet, heat the frying oil over medium-high heat. Briefly fry each corn tortilla for about 10 seconds on each side until they become pliable. Drain on paper towels.
4. Mix together both cheeses but set aside 1/4 for the top. Mix sour cream, cottage cheese, and most of the cheddar and jack cheeses in a bowl.
5. In a deep baking dish, start with a layer of enchilada sauce and fried tortillas. Layer meat on top. Add cheese mixture.
